Topic: Unit 5 Tasting – mix bag sparkling wine with Tri-Champagne

#1. Sant Ambroeus Prosecco

This wine is clear and pale lemon-green.

This wine is clean. It is pronounce aroma intensity of white flower, peachy, apple and tropical fruits. It is youthful.

This wine is off-dry with medium acidity, medium- alcohol(11%), medium- body, medium+ flavor intensity of fresh fruit, white flower and tropical fruits. It has creamy bubbles with medium- and simple finish.

Good quality. This wine shows its typicality of wine style and has nice concentration of flavor. But lacking of complexity and lengths stop the wine to be very good quality. 

#2. Champagne Veuve Clicquot Demi-Sec

This wine is clear and medium lemon.

This wine is clean. It is medium+ aroma intensity of yeasty, creamy, flower and peachy, and apple. It is developing.

The wine is off-dry with medium+ acid, medium alcohol(12%), medium+ and round body, medium+ flavor intensity of ripen fruit, creamy, citrus, lemon, yeasty. It has creamy bubbles with medium finish.

Good quality. This wine has good balance between acid and sweetness. It also has nice concentration of flavor, but the flavor characters it not complex. The finish is not long enough to be very good quality wine.

#3. Freixenet Gran Selección

This wine is clear and medium lemon-green.

This wine is clean. It is medium aroma intensity of white flower, hint of ripen peach, apricot, plastic, hint of flinty, green-apple, spices, herbaceous, and creamy. It is youthful.

This wine is dry with medium acid, medium alcohol(11.5%), medium and round body, medium flavor intensity of creamy, flower ripen fruit, apricot. It has creamy bubbles with medium- finish.

Good quality. This wine has good balance between acid and body, and also show its typicality. But the concentration is not strong enough and the length is not long enough to be a very good quality wine.

#4. Nederburg Cuvée Brut

This wine is clear and medium lemon.

This wine is clean. It is medium intensity of citrus, mineral, yeasty, and white flower. It is developing.

This wine is dry with medium acid, medium alcohol(11.5%), medium and liner body, medium flavor intensity of citrus, mineral, yeasty and white flower. It has creamy bubble and medium finish.

Good quality. This wine has good balance between acid and body and shows some complexity of flavor. But lacking of concentration and finish stop it become a very good quality wine.

#5. Champagne Pol Roger 2006

This wine is clear and medium lemon.

This wine is clean with medium+ aroma intensity of toasty, yeasty, buttery, ripen citrus, mineral. It is developing.

This wine is dry with medium+ acid, medium alcohol, medium+ and round body, medium+ flavor intensity of yeasty, creamy, buttery, ripen citrus and peachy. It has creamy bubble and long finish.

Outstanding quality. This wine has good complexity and concentration of flavor and aroma. The finish is long and good balance between acid and body.

#6. Duval-Leroy Non-Vintage

This wine is clear and medium lemon.

This wine is clean with medium+ intensity of caramel, yeasty, butter, ripen peach, citrus aroma. It is developing.

This wine is dry with medium+ acid, medium alcohol, medium+ and round body, medium intensity of yeasty, toasty, and some tropical fruit flavor. It has creamy bubble and medium finish.

Good quality. This wine has strong concentration of flavor and aroma. Nice balance between acid and body. But the wine is not complex enough and the finish is not long enough to be a very good quality wine.

Conclusion:

大亂鬥的Mix Bag,中間有三款香檳必須要辨識出來!

Prosecco & Demi-Sec香檳是滿容易就可以挑出來的(off-dry的微甜口感),Vintage Champage也不算難辨認,主要的問題出在CAVA & 南非Sparkling!

怎樣都辨識不出Chenin Blanc的濕稻草味!!真是麻煩,得再加強一下對這個品種的瞭解了!
